In the moutains west of Lake Tawar in Aceh, Sumatra, you'll find the Koperasi Kopi Gayo Organic Cooperative (KKGO). The KKGO coop is a wonderful example of what coffee producers who work together can bring to marke. As with most coffees from KKGO, this one is processed in the traditional Sumatran way: wet-hulled. Wet-hulling is a hybrid, semi-washed processing method where the coffee is left with the cherry still on to allow it to partially dry with the bean for a day or so before it is finally washed off and dried again. This method results in a low-acid, earthy, heavy bodied bean, which is why these traits are synonymous with Sumatran coffee!
